I’ll be very transparent in saying I have failed in keeping up with my project duties this past year. For one reason or another I was preoccupied with other things… I’m going to say student teaching.

Being in Vegas roughly 3 months now has presented me the chance to rekindle my SD experiences in the kitchen. Cooking itself presents many challenges, but allows me to eat slightly healthier than dining elsewhere would. And so, listed below are the main dishes I have prepared thus far in my limited experiences in the kitchen.

Breakfast

Cereal + Milk
(One of the following: Trix, Cocoa Puffs, Fruit Loops, Apple Jocks, Corn Pops, Cinnamon Toast Crunch, or Honey Nut Cheerios)
Milk is obviously 2%

Lunch

Ham or Turkey Sandwich with the following ingredients: Bread, Cheese, Lettuce, Tomato, Hot Cheetos (put directly inside the sandwich). I have to keep the items in separate bags and place them together otherwise my sandwich gets soggy.

Dinner

Chicken (Pre-seasoned) + Broccoli + Pasta = Chicken Alfredo
Ground Beef + Pasta = Spaghetti
Eggs + Bacon + Rice = Continental Asian Breakfast
Eggs + Spam/Chicken + Soy Sauce + Sriracha= Fried Rice

Or Processed Foods: Lasagna, Hot Pockets, Pizza, etc.

I’ll admit my diet hasn’t exactly gotten that much better. However, it’s a step in the right direction from eating out every other day (and escaping the sugary Boba drinks I still am so addicted to). That’s the best I can do for now. Until next time.
